How do we add envelope number as an option to look up contributors during batch entry?

Add envelope numbers as a Member Attribute, then configure the Contribution Settings to allow envelope number lookup

To create a custom Member Attribute for the envelope number, go to Members > Settings > Member Attributes. Next, you'll need to configure the contribution settings to allow for envelope number lookup in batch entry.  Go to Giving > Settings > Other Options.  Add "envelope number" as an alternate search field.
