The solution for this is to use the Custom Name/Address 1 Field in the statement options. You would want to create a People Attribute (named something similar) that is a text attribute, and you can do that under People > Settings > People Attributes. Then, if you populate that field for a person and if it has "Mr. & Mrs. John & Jane Doe" in it, then when you run statements and use that option, it will override the default of "Doe Household (John)" in the case where I was the only giver. If that field is empty for a person, then the system defaults to the way you are seeing now, so you can only enter values for those that need to be changed.
